Meatless Friday: Breakfast for Dinner
Oh, hey, look! It’s Friday. Time to fix up a dinner (and breakfast and lunch) without any meat in it. You don’t like fish and don’t much like beans, so what’s on the menu?
Breakfast for dinner! Why not? You can skip the sausage and bacon, still have pancakes or waffles and eggs. All the yum. None of the meat–so you’re sacrificing, especially when bacon and eggs are soooo so good together.
We’re probably having breakfast for dinner this very night. My oldest requested it. Pancakes are pretty simple, and so are eggs. We often do cheesy scrambled eggs, or fried eggs. Another great option on the breakfast for dinner menu is egg-in-a-hole. It’s toast and eggs. It’s delicious. Now my mouth is watering.

Ooh, I never thought of trying hash browns. I just think I might work that in some time soon!
I know you have certain dietary restrictions, so I don’t know if this could be adapted to work for you… but one of our favorite breakfast -for-dinner meals is baked oatmeal. (I LOVE the flavor of oats, but not the consistency of oatmeal, so this is the perfect solution! ) We usually eat it with a fresh fruit topping (and cheesy eggs on the side. always!)
oh, yum! I never thought of doing oatmeal for dinner. We have a baked oatmeal recipe that we love, too.
um…..those are the. prettiest. eggs.
Right? They were from a local-ish farm…and the photo is well over a year old. I was too lazy–er, busy– to take a new one. 😉
